Super mellowness "old sake curry" Take in Okinawa's culture and make a curry that is unique to Okinawa, so I decided to do so 20 years ago. And it is this old sake curry that was born as a result of trial and error. The hint was old wine of awamori. The spices are mixed with awamori so that the liquor matures and has a mellow taste by letting it sit for a long time, and it is changed to a surprisingly mellow taste by letting it sit for a certain period of time. Curry made with this spice is also naturally a milder curry than ever before. There is no flour in the roux, and the toromi is served with onions and tomatoes only. Awamori's alcohol evaporates in the process of simmering, so it can be recommended for both the elderly and children at ease.
